Chocolate Chip Cookie Cake with Buttercream Frosting

Cookie Cake

This cookie cake was a special item I made for my coworker on her last day of work. It was only a 9-inch cookie, and I did not have as much room for icing letters as I thought. I only could write "BYE". To add flair, I put yellow food dye in the icing and topped it with chocolate chips and glitter sprinkles. It was a very successful goodbye party. Dutch Apple Pie

I first made this recipe when I saw a video of a professional baker knitting the lattice on a traditional apple pie. I thought that would be fun, but upon researching it was a lot of work. A good alternative is the Dutch Apple Pie, which features a crumble instead of a lattice. Click here to see the recipe I used, which I modified by doubling the apple filling but not the number of apples. This created additional sauce that was perfect for a more gooey, comforting pie.

Cookies & Cream Cake

This recipe is great because it can be made into both cupcakes and a cake. It also is fairly easy and is a modification of boxed cake mix. I was ashamed at first to not bake from scratch, but it is a quick alternative and easy to make the cake seem more professional. Simply add crushed Oreo pieces to the batter and bake as suggested on the box. For the icing, I made a traditional buttercream and topped it with the crumble and a mini Oreo for decoration.
